I am currently enrolled at The Culinary Institute of America in Hyde Park, New York. Prior to enrollment I was a Sous Chef with six years of experience in fine dining, casual dining, banquets and catering. Cooking is my life, my love and my passion. As far back as I can remember, I always wanted to be a Chef and with a mere six years of knowledge and experience under my belt, I still crave more. Inspiration & Philosophy At this point in time, I am my own inspiration. Thinking back on my life, cooking is something that I have always wanted to do as long as I can remember. When I was younger during all family gatherings my family would ask me "Nicolas, what do you want to be when you grow up?", and every time the answer was the same, "I want to be a chef". There may be a point in time where I find higher inspiration, but for now, I always look and dig deeper into myself for the motivation to keep pushing forward. My food philosophy is also tied into these concepts; "Just do you". Be yourself and let your passion for what you love shine bright.
